The Emmental: its fabrication is attested since the Middle-Ages and it started to be really important in Savoy at the beginning of the 19th century. It is thanks to this cheese that we started getting organized in groups of milk producers who use and transform milk. The fruitiest cheese gets its strong taste from the ground of Savoy and Upper Savoy, where it is exclusively produced. The Raclette: it was invented by shepherds during the Middle Ages. At the time, it was called "roasted cheese" because it referred to the dish in which a half round of cheese was melted in front of a chimney fire. It is only later that the name "raclette" appeared, this time referring to the action of scraping the top of the melted cheese to put it on the potatoes in the plate. It is a round cheese with a dark orange and smooth rind and it has an unforgettable strong and fragrant taste. In this cooperative you will find the place where the Emmental of Savoy (IGP = Protected Geographic indication), the Raclette of Savoy (soon to be IGP) and the mountain tomme cheese are truly made.

At Le Petit-Bornand, half way between the Thônes valley and Bonneville, Marie, Daniel and Clément look after about 50 Abondance cows. Their creamy milk is used to make delicious cheeses on the farm: farm-produced reblochon (as well as abondance, tomme and raclette). In the summer, the cows are taken up to the Mayse meadows where they feed on grass and mountain flowers. In the winter, they are safe and warm in their cowshed, where they eat hay which is grown at Le Petit-Bornand.
